Wild Heart Brewing is looking for an experienced Kitchen Manager to lead back-of-house operations at our full-service restaurant in Hartsville, SC.

This is a hands-on leadership role. You'll own everything from daily prep and staff development to ordering, inventory, and food safety, all while helping us deliver the consistently great food our guests and team expect.

The ideal candidate brings at least three years of kitchen management or lead cook experience, a proven track record with food costs and inventory, and the kind of steady, positive presence that makes a kitchen run well even when it's busy.

Kitchen Manager

We're looking for an experienced, hands-on Kitchen Manager to lead back-of-house operations at our full-service restaurant. You'll be the heartbeat of our kitchen, overseeing everything from daily prep and staff to ordering, inventory, and food safety, while helping us deliver consistently excellent food and a well-run operation our team is proud of.

Responsibilities

Kitchen Prep & Operations

  • Direct and participate in all prep work

  • Maintain consistent quality and presentation standards across all menu items

  • Monitor line flow and make real-time adjustments during service to keep tickets moving efficiently

  • Regular specials and menus will be finalized at least one week in advance

  • Special event menus will be finalized at least one month in advance

Staff & Scheduling

  • Build and manage weekly kitchen schedules, balancing labor costs with coverage needs across all shifts

  • Hire, train, and develop kitchen staff, including cooks, prep staff, and dishwashers

  • Conduct regular performance check-ins and provide ongoing coaching and feedback to the team

  • Foster a positive, professional kitchen culture grounded in teamwork and accountability

Ordering & Inventory

  • Manage vendor relationships and place accurate, timely orders to maintain appropriate par levels

  • Conduct regular inventory counts and reconcile usage against sales data to identify waste and control food costs

  • Track pricing trends and work with ownership to manage cost-of-goods within budget targets

Food Safety & Sanitation

  • Ensure full compliance with local health codes, food safety regulations, and internal safety protocols at all times

  • Maintain accurate temperature and HACCP logs, and enforce proper food handling, storage, and labeling practices

  • Lead health inspection preparation and respond promptly to any compliance findings

HouseKeeping

  • Uphold rigorous cleanliness standards throughout the kitchen, including daily, weekly, and deep-cleaning schedules

  • Ensure all equipment is maintained in proper working condition and coordinate service or repairs as needed

  • Organize storage areas to support efficient workflow and minimize cross-contamination risk

Qualifications

  • 3+ years of kitchen management or lead cook experience in a full-service restaurant setting

  • Proven ability to manage and motivate a kitchen team in a high-volume environment

  • Experience with food cost management, ordering, and inventory control

  • ServSafe Manager certification (or willingness to obtain within 90 days of hire)

  • Solid working knowledge of food safety regulations and health department standards

  • Excellent organizational skills and attention to detail

  • Ability to work a flexible schedule including evenings, weekends, and occasional  holidays
